- 8 oz short pasta (penne or fusilli)
- 2 cups low-sodium chicken broth
- 4 oz cream cheese
- ¾ cup freshly grated Parmesan cheese
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Sauté diced chicken in olive oil over medium heat until golden brown, about 5-7 minutes.
- Add minced garlic and cook until fragrant, about 30 seconds; then pour in chicken broth.
- Stir in pasta and Italian seasoning; bring to a boil, then reduce heat and simmer until pasta is tender, about 10-12 minutes.
- Mix in cream cheese and Parmesan until creamy; adjust seasoning if necessary.
- Serve warm with extra Parmesan on top.
