- 1 cup brown or green lentils
- 2 medium carrots, chopped
- 2 celery stalks, chopped
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups low-sodium vegetable broth
- 1 teaspoon thyme
- 1 teaspoon cumin
- 2 bay leaves
- 2 cups spinach or kale, chopped
Instructions
- Chop the carrots, celery, onion, and garlic.
- In a skillet over medium heat, sauté the onions until translucent (about 5 minutes), then add garlic until fragrant.
- Transfer the sautéed mixture to your slow cooker. Add all remaining ingredients except the greens.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until lentils are tender.
- Stir in greens about 30 minutes before serving and adjust seasonings as needed.
