Description

Ingredients

  • Mini bell peppers
  • Ground turkey or beef
  • Cooked rice (white, brown, or quinoa)
  • Onion
  • Shredded cheese (cheddar or mozzarella)
  • Spices (salt, pepper, garlic powder)
  • Fresh herbs for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice mini bell peppers in half lengthwise and remove seeds.
  3. Sauté chopped onions in a skillet over medium heat until translucent, about 5 minutes. Add ground meat and seasonings; cook until fully browned.
  4. Mix in cooked rice and half of the cheese into the meat mixture.
  5. Stuff each pepper half generously with the filling.
  6. Place stuffed peppers on a baking sheet, sprinkle remaining cheese on top, and bake for 20-25 minutes until cheese is melted and bubbly.
