  • 2 bell peppers (1 red, 1 yellow)
  • 1 large yellow onion
  • 2 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Juice of 1 lime
  • Salt & pepper to taste
  • Optional toppings: sour cream, avocado slices, shredded cheese, fresh cilantro

Instructions

  1. Marinate Chicken: In a bowl, mix olive oil, chili powder, cumin, garlic powder, lime juice, salt, and pepper. Coat chicken breasts in the marinade for at least 30 minutes.
  2. Sauté Vegetables: Heat olive oil in a skillet over medium-high heat. Add sliced onion and bell peppers; sauté until softened and caramelized.
  3. Cook Chicken: Push veggies aside in the skillet. Add marinated chicken breasts and cook for 7-8 minutes on each side until fully cooked.
  4. Shred Chicken (optional): Shred the warm chicken using two forks in the skillet for easier assembly.
  5. Assemble Bowls: Layer rice or lettuce at the bottom of serving bowls. Top with shredded chicken, sautéed veggies, and your favorite toppings.
