  • 1 can (14.5 oz) diced tomatoes
  • 2 tsp Cajun seasoning
  • 4 cups low-sodium chicken broth
  • 1 cup long-grain white rice

Instructions

  1. Rinse and soak the dried red kidney beans overnight.
  2. In a large pot, heat oil over medium heat. Sauté onions, celery, and green bell pepper until softened (about 5 minutes).
  3. Add sliced sausage and minced garlic; cook until sausage is golden brown (about 5 more minutes).
  4. Stir in diced tomatoes, soaked beans, Cajun seasoning, and chicken broth; combine well.
  5. Bring to a boil, then reduce heat to low, cover partially, and simmer for at least 1 hour.
  6. About 20 minutes before serving, cook rice according to package instructions using broth instead of water.
  7. Serve the bean mixture over rice and garnish with fresh parsley if desired.
