  • 2 (14.5 oz) cans diced tomatoes
  • 1 large sweet onion, chopped
  • 4 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 cups beef broth
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 tsp ground cumin
  • Optional: sour cream or cheddar cheese for topping

Instructions

  1. Heat 2 tbsp olive oil in a large pot over medium-high heat. Add seasoned stew meat in batches and brown on all sides.
  2. Add chopped onions and minced garlic; sauté until onions are translucent.
  3. Pour in canned tomatoes and beef broth; scrape the bottom of the pot to collect browned bits.
  4. Stir in drained kidney beans and diced bell peppers.
  5. Reduce heat to medium-low, cover, and let simmer for 1 to 1.5 hours until the meat is tender.
