  • 1 ham hock (about 1 lb)
  • 1 cup dried navy beans, soaked overnight
  • 1 cup diced carrots (about 2 medium)
  • 1 cup diced celery (about 2 stalks)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 2 bay leaves
  • 1/4 tsp freshly ground black pepper

Instructions

  1. Prepare your ingredients by dicing the onion, carrots, and celery. Rinse the soaked beans thoroughly.
  2. Sauté the onion and garlic in a skillet over medium heat until fragrant and translucent.
  3. Add the sautéed mixture to your slow cooker along with the ham hock, beans, carrots, celery, thyme, bay leaves, black pepper, and chicken broth. Stir gently.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Once finished cooking, remove the ham hock; shred any meat off the bone and return it to the soup.
  6. Taste before serving and adjust seasoning as desired.
