  • 8 oz fettuccine pasta
  • 6 oz high-quality smoked salmon, torn into pieces
  • 1 cup heavy cream
  • Zest of 1 lemon
  • 2 tbsp fresh dill, chopped (or 1 tbsp dried)
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Boil a large pot of salted water. Add fettuccine and cook until al dente according to package instructions. Drain, reserving some pasta water.
  2. In a skillet over medium heat, melt butter or olive oil. Sauté minced garlic until fragrant (about 1 minute).
  3. Stir in heavy cream and let simmer for about two minutes until slightly thickened. Season with salt, pepper, and lemon zest.
  4. Gently fold in smoked salmon and dill; warm through for about two minutes without overcooking the salmon.
  5. Toss the drained pasta into the skillet. If needed, add reserved pasta water for desired consistency.
  6. Sprinkle with grated Parmesan before serving.
