- 8 oz fettuccine pasta
- 6 oz high-quality smoked salmon, torn into pieces
- 1 cup heavy cream
- Zest of 1 lemon
- 2 tbsp fresh dill, chopped (or 1 tbsp dried)
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Boil a large pot of salted water. Add fettuccine and cook until al dente according to package instructions. Drain, reserving some pasta water.
- In a skillet over medium heat, melt butter or olive oil. Sauté minced garlic until fragrant (about 1 minute).
- Stir in heavy cream and let simmer for about two minutes until slightly thickened. Season with salt, pepper, and lemon zest.
- Gently fold in smoked salmon and dill; warm through for about two minutes without overcooking the salmon.
- Toss the drained pasta into the skillet. If needed, add reserved pasta water for desired consistency.
- Sprinkle with grated Parmesan before serving.
