  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1.5 cups panko breadcrumbs
  • 0.5 cup grated Parmesan cheese
  • 8 oz fresh burrata cheese
  • Zest of 1 lemon
  • 1 cup fresh basil leaves
  • 4 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Flatten chicken breasts between plastic wrap using a meat mallet until about half an inch thick.
  2. Set up a breading station with flour in one dish, beaten eggs in another, and panko mixed with Parmesan in a third.
  3. Coat each chicken breast in flour, dip into egg, then press into the breadcrumb mixture until fully coated.
  4. Heat olive oil in a skillet over medium heat and fry chicken for about 4-5 minutes on each side until golden brown.
  5. Once cooked, place on serving plates and cut open burrata to let its creaminess spill over the chicken.
