  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter (melted)
  • 16 oz cream cheese (softened)
  • 1 cup sour cream (full-fat)
  • ¾ cup granulated sugar
  • 3 medium Granny Smith apples (peeled and chopped)
  • 2 tsp cinnamon
  • ½ cup brown sugar
  • 1 cup rolled oats
  • ½ cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a greased springform pan.
  3. Beat softened cream cheese until smooth in another bowl. Gradually add sugar and sour cream; mix until well combined. Stir in vanilla extract.
  4. Fold in chopped apples and cinnamon into the cheesecake mixture.
  5. In a separate bowl, combine oats, brown sugar, flour, melted butter, and nuts if using to create the topping.
  6. Pour cheesecake filling over crust in the springform pan. Evenly sprinkle oat mixture on top.
  7. Bake for 55-60 minutes until set but slightly jiggly in the center. Cool at room temperature before chilling for at least four hours.
