Description

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 8 oz feta cheese, crumbled
  • 8 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tsp lemon zest
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease an 8-inch springform pan.
  2. In a bowl, mix graham cracker crumbs with melted butter until well combined. Press into the bottom of the pan to form the crust.
  3. In a mixing bowl, blend feta and cream cheese until smooth. Add sugar and beat until fluffy.
  4. Incorporate eggs one at a time, then stir in vanilla extract and lemon zest.
  5. Pour filling over the crust and smooth the top. Bake for 45-50 minutes until set but slightly jiggly in the center.
  6. Let cool in the oven with the door slightly ajar for an hour, then refrigerate until completely chilled before serving.
