  • ⅓ cup unsalted butter, melted
  • ⅓ cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 3 large eggs, room temperature
  • 2 tsp vanilla extract
  • 1 cup brown sugar
  • ½ cup corn syrup
  • ½ cup pecans or raisins (optional)

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and granulated sugar. Press firmly into the bottom of a springform pan.
  2. Bake crust for 10 minutes until golden; let cool.
  3. In another bowl, beat cream cheese until smooth. Gradually add sour cream, eggs, vanilla extract, and granulated sugar until well combined.
  4. In a separate bowl, mix brown sugar and corn syrup. Stir in any optional nuts or raisins.
  5. Pour the topping over the cooled cheesecake filling.
  6. Bake for 45-50 minutes until set but slightly jiggly in the center.
  7. Cool at room temperature before refrigerating for at least four hours or overnight before serving.
