  • 3/4 cup unsalted butter (softened)
  • 2 large eggs
  • 2 tsp vanilla extract
  • 6 Cadbury Creme Eggs (cut in half)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking trays with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3-4 minutes).
  3. Add eggs one at a time, mixing in the vanilla extract until fully combined.
  4. In another bowl, whisk together flour, baking soda, and salt. Gradually incorporate into the wet mixture until just combined.
  5. Chill the dough for at least 30 minutes to prevent spreading.
  6. Scoop out dough using a cookie scoop or tablespoon; flatten slightly in your palm and place half a Creme Egg in the center before wrapping the dough around it.
  7. Place on prepared baking sheets about 2 inches apart and bake for 12-15 minutes or until golden brown around the edges but soft in the middle. Allow to cool on wire racks.
