Ingredients
Scale
- 2 1/4 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar (light or dark)
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 cup unsalted butter (softened)
- 2 large eggs
- 2 tsp vanilla extract
- 6 Cadbury Creme Eggs (cut in half)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking trays with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3-4 minutes).
- Add eggs one at a time, mixing in the vanilla extract until fully combined.
- In another bowl, whisk together flour, baking soda, and salt. Gradually incorporate into the wet mixture until just combined.
- Chill the dough for at least 30 minutes to prevent spreading.
- Scoop out dough using a cookie scoop or tablespoon; flatten slightly in your palm and place half a Creme Egg in the center before wrapping the dough around it.
- Place on prepared baking sheets about 2 inches apart and bake for 12-15 minutes or until golden brown around the edges but soft in the middle. Allow to cool on wire racks.
