  • 1 ½ cups crushed Lotus biscuits
  • ½ cup unsalted butter, melted
  • 16 oz full-fat cream cheese, at room temperature
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 2 tsp pure vanilla extract
  • 1 tbsp gelatin powder
  • 3 tbsp warm water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a food processor, crush Lotus biscuits into fine crumbs. Mix with melted butter until well combined.
  3. Press the biscuit mixture into the bottom of a springform pan to form the crust.
  4. In a large bowl, beat cream cheese until smooth. Gradually add sugar and mix until creamy.
  5. Stir in sour cream and vanilla extract until fully combined.
  6. Dissolve gelatin in warm water according to package instructions then gently mix it into the filling.
  7. Pour half of the filling over the crust and sprinkle crushed Lotus biscuits on top. Add the remaining filling and smooth it out.
  8. Bake for 45-50 minutes until set but slightly jiggly in the center. Allow cooling before refrigerating for at least four hours or overnight.
