  • ½ cup unsalted butter (melted)
  • ½ cup granulated sugar
  • 16 oz cream cheese (softened)
  • 1 cup sour cream
  • 1 cup pecan halves (chopped)
  • ½ cup brown sugar
  • 2 tsp vanilla extract
  • 1 cup heavy cream
  • 2 tbsp cornstarch
  • ½ cup caramel sauce

Instructions

  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press into the bottom of a springform pan.
  2. Beat softened cream cheese until smooth. Gradually add sugar, mixing until fluffy. Fold in sour cream, vanilla extract, chopped pecans, and cornstarch gently.
  3. Pour the filling over the crust and bake for about 50-60 minutes or until edges are set but center is slightly jiggly. Turn off the oven and let cool inside for an hour.
  4. Chill in the refrigerator for at least four hours or overnight. Whip heavy cream to soft peaks and spread over the cheesecake before serving.
  5. Drizzle caramel sauce over each slice just before serving.
