- 2 large eggs
- ¼ cup unsalted butter (melted)

- ⅓ cup all-purpose flour (for streusel)
- ¼ cup brown sugar (for streusel)
- 2 tbsp cold unsalted butter (for streusel)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with non-stick spray or paper liners.
- In a large bowl, whisk together the flour, sugars, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, mix the pumpkin puree, eggs, melted butter, and diced apples until well combined. Gently fold this mixture into the dry ingredients until just combined.
- For the streusel topping, mix the flour and brown sugar in a small bowl. Cut in the cold butter until crumbly.
- Fill each muffin cup about two-thirds full with batter and top generously with streusel.
