  • ¾ cup granulated sugar
  • ½ cup brown sugar
  • 2 tsp baking powder

  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 2 large eggs
  • ¼ cup unsalted butter (melted)
  • ½ tsp salt
  • ⅓ cup all-purpose flour (for streusel)
  • ¼ cup brown sugar (for streusel)
  • 2 tbsp cold unsalted butter (for streusel)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with non-stick spray or paper liners.
  2. In a large bowl, whisk together the flour, sugars, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, mix the pumpkin puree, eggs, melted butter, and diced apples until well combined. Gently fold this mixture into the dry ingredients until just combined.
  4. For the streusel topping, mix the flour and brown sugar in a small bowl. Cut in the cold butter until crumbly.
  5. Fill each muffin cup about two-thirds full with batter and top generously with streusel.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
