  • 2 pieces naan bread (8-inch)
  • 2 cups butternut squash, peeled and cubed
  • 4 oz goat cheese, crumbled
  • 10 fresh sage leaves
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss butternut squash cubes with 1 tablespoon olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden brown.
  3. In a skillet, heat remaining olive oil over medium heat. Fry sage leaves until crispy; drain on paper towels.
  4. Arrange naan on a baking sheet. Spread roasted squash evenly over each piece and top with goat cheese.
  5. Bake for 10-12 minutes until heated through and slightly golden.
  6. Top with crispy sage before slicing and serving immediately.
