- 2–3 ripe bananas
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 cup butter (softened)
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp baking soda
- Pinch of salt
- Chocolate chips or nuts (optional)
Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, mash the ripe bananas until smooth.
- In a larger bowl, cream the softened butter with both sugars until light and fluffy.
- Add in the egg and vanilla extract; mix until well combined.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add this to the wet mixture until just combined.
- Gently fold in the mashed bananas and chocolate chips if desired.
- Scoop dollops of dough onto prepared trays, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until golden brown around the edges and soft in the center.
- Let cool on wire racks before enjoying.
