Ingredients

Scale
  • 8 cups stale brioche or challah bread, cubed
  • 4 ripe bananas, sliced
  • 6 large eggs
  • 2 cups whole milk (or almond/oat milk)
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 cup pure maple syrup
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a large baking dish with butter or non-stick spray.
  2. Cut the stale bread into one-inch cubes and set aside.
  3. In a large bowl, whisk together eggs, milk, vanilla extract, cinnamon, and maple syrup until well combined.
  4. Gently fold in the banana slices and cubed bread until fully coated. Allow it to sit for about 10 minutes for the bread to absorb the custard.
