Ingredients

  • 2 cups fresh blackberries
  • 1/2 cup granulated sugar
  • 1 pre-made pie crust (or homemade)
  • 1 tbsp lemon juice
  • 2 tbsp cornstarch
  • 1 egg (for egg wash)

Instructions

  1. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. Rinse blackberries under cold water and pat dry. In a bowl, mix blackberries, sugar, lemon juice, and cornstarch.
  3. Roll out the pie crust on a floured surface to about 1/8-inch thick. Cut out circles using a round cutter.
  4. Place about one tablespoon of filling in the center of each circle. Fold over and seal edges with a fork.
  5. Brush tops with egg wash and bake for 20-25 minutes until golden brown.
