  • 1 cup shrimp or chicken breast (sliced)
  • 1 cup firm tofu (cubed)
  • 3 tbsp tamarind paste
  • 2 tbsp fish sauce
  • 2 tbsp granulated sugar
  • 1 tbsp Sriracha sauce
  • 3 garlic cloves (minced)
  • 2 eggs (beaten)
  • ½ cup roasted peanuts (crushed)
  • ¼ cup green onions (chopped)
  • Lime wedges (for serving)

Instructions

  1. Prepare rice noodles according to package instructions until al dente. Drain and set aside.
  2. In a bowl, mix tamarind paste, fish sauce, sugar, minced garlic, and Sriracha; whisk until smooth.
  3. In a large skillet over medium-high heat, add oil and cook shrimp or chicken until golden brown (5-7 minutes).
  4. Add drained noodles to the skillet and pour the prepared sauce over them; stir gently to coat.
  5. Push noodles to one side and scramble beaten eggs in the empty space until just set; mix everything together.
  6. Toss in chopped green onions and crushed peanuts; serve hot with lime wedges.
