  • 1 lb sirloin or ribeye steak, cut into bite-sized pieces
  • 1 cup long-grain white or brown rice
  • 2 cups shredded cheddar or Monterey Jack cheese
  • 1 cup bell peppers, diced (any color)
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp Italian herbs
  • 2 tbsp olive oil

Instructions

  1. Prep your ingredients by chopping steak, dicing bell peppers and onion, and mincing garlic.
  2. In a large skillet over medium heat, add olive oil. Sauté onions until translucent, then add steak pieces and garlic. Cook until browned.
  3. Stir in rice until well combined with the meat mixture. Pour in beef broth; bring to a boil before reducing heat to simmer gently.
  4. After about 15 minutes when most liquid is absorbed, sprinkle cheese on top and cover until melted.
  5. Fold everything together gently once the cheese has melted; let sit for a few minutes before serving.
