  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup full-fat Greek yogurt
  • 3 cloves garlic, minced
  • Juice of 2 lemons
  • 2 tbsp olive oil
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • 1 tsp paprika
  • 1 cucumber, diced
  • 2 ripe tomatoes, diced
  • 1 small red onion, thinly sliced
  • Pita bread for serving

Instructions

  1. In a bowl, combine Greek yogurt, garlic, lemon juice, olive oil, cumin, oregano, and paprika. Add chicken breasts and coat well. Marinate for at least 30 minutes.
  2. Heat a grill pan over medium-high heat. Cook marinated chicken for 5-7 minutes per side until golden brown and cooked through. Let rest before slicing.
  3. While the chicken cooks, prepare tzatziki by mixing yogurt with grated cucumber (excess water squeezed out), minced garlic, lemon juice, olive oil, salt, and pepper.
  4. Chop cucumber and tomatoes; slice red onion.
  5. Warm pita bread in the oven or on a skillet until soft.
  6. Assemble bowls with salad greens or rice as the base; top with sliced chicken and vegetables before drizzling with tzatziki.
