  • 4 boneless, skinless chicken breasts
  • 1/2 cup unsalted butter (softened)
  • 4 cloves garlic (minced)
  • 1/4 cup fresh parsley (finely chopped)
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 cup panko breadcrumbs
  • Salt and pepper (to taste)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place each chicken breast between plastic wrap and pound to about 1/2 inch thick.
  3. In a bowl, combine softened butter, minced garlic, parsley, lemon juice, salt, and pepper to create the garlic butter filling.
  4. Spoon the mixture onto the center of each chicken breast and fold edges over tightly to seal.
  5. Dredge stuffed chicken in flour, dip in beaten eggs, then coat with panko breadcrumbs.
  6. Place on a parchment-lined baking sheet and bake for 25-30 minutes or until golden brown and cooked through (165°F internal temperature).
