Ingredients

  • 2 large eggs
  • 1 tsp peppermint extract
  • 1 cup semi-sweet chocolate chips
  • Crushed candy canes (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy. Add eggs one at a time, mixing well after each addition.
  4. Stir in peppermint extract.
  5. Gradually combine the dry ingredients with the wet mixture until just blended.
  6. Fold in chocolate chips and optional crushed candy canes.
  7. Drop rounded tablespoons of dough onto lined baking sheets, spacing them two inches apart.
  8. Bake for 10-12 minutes until edges are firm but centers remain soft. Cool on wire racks before serving.
