Description

Chocolate Peppermint Rice Krispie Treats are a festive, nostalgic dessert that combines the classic crunch of Rice Krispies with gooey marshmallows, rich chocolate, and a refreshing hint of peppermint.   • 6 cups Rice Krispies
  • 4 cups mini marshmallows
  • 1/2 cup unsalted butter (1 stick)
  • 1 cup semi-sweet chocolate chips
  • 1 tsp peppermint extract
  • 1/2 cup crushed candy canes

Instructions

  1. Prepare your workspace by lining a 9×13 inch baking dish with parchment paper.
  2. In a large saucepan over low heat, melt the butter until bubbly. Add mini marshmallows and stir until completely melted and smooth.
  3. Remove from heat and quickly fold in the Rice Krispies until evenly coated.
  4. Stir in half of the chocolate chips while the mixture is still warm, then add peppermint extract.
  5. Transfer the mixture into the prepared baking dish, pressing down evenly.
  6. Let it cool at room temperature until set.
  7. Melt remaining chocolate chips in the microwave and drizzle over the cooled treats. Top with crushed candy canes before it hardens.
  8. Cut into squares and enjoy!
