  • 2 cups chopped Granny Smith or Honeycrisp apples
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour, baking powder, cinnamon, granulated sugar, brown sugar, and salt.
  3. Peel and chop apples; toss with lemon juice to prevent browning.
  4. In another bowl, beat the eggs, then mix in vegetable oil and vanilla extract until smooth.
