  • 1/4 cup brown sugar
  • 2 large eggs (room temperature)
  • 1/2 cup unsalted butter (softened)
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon (plus extra for swirling)
  • 1/2 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mash the bananas until smooth.
  3. In another bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy.
  4. Mix in eggs and vanilla extract until combined.
  5. In a separate bowl, sift together flour, baking soda, salt, and cinnamon.
  6. Gradually add dry ingredients to wet ingredients, mixing gently to combine.
  7. Prepare the cinnamon sugar swirl by mixing additional cinnamon with sugar.
  8. Pour half of the batter into the prepared loaf pan, sprinkle half of the cinnamon mixture, then layer with the remaining batter and topping.
  9. Bake for 60-70 minutes or until a toothpick comes out clean from the center.
