  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup sweet corn (fresh or frozen)
  • 1 medium red bell pepper, diced
  • 1 small red onion, diced
  • 1/2 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tbsp olive oil
  • 1 jalapeño, finely chopped (optional)
  • Salt to taste

Instructions

  1. Rinse the black beans under cold water and drain the sweet corn.
  2. Dice the red bell pepper and red onion into small pieces.
  3. In a large bowl, combine black beans, corn, bell pepper, red onion, cilantro, and jalapeño if using. Mix well.
  4. Squeeze fresh lime juice over the mixture and drizzle with olive oil. Toss until evenly coated.
  5. Taste and adjust seasoning with salt or more lime juice as desired.
  6. Serve immediately or let chill in the fridge for 30 minutes to enhance flavors.
