- 1 cup sweet corn (fresh or frozen)
- 1 medium red bell pepper, diced
- 1 small red onion, diced
- 1/2 cup fresh cilantro, chopped

- 1 jalapeño, finely chopped (optional)
- Salt to taste
Instructions
- Rinse the black beans under cold water and drain the sweet corn.
- Dice the red bell pepper and red onion into small pieces.
- In a large bowl, combine black beans, corn, bell pepper, red onion, cilantro, and jalapeño if using. Mix well.
- Squeeze fresh lime juice over the mixture and drizzle with olive oil. Toss until evenly coated.
- Taste and adjust seasoning with salt or more lime juice as desired.
- Serve immediately or let chill in the fridge for 30 minutes to enhance flavors.
