  • 4 medium Russet potatoes, peeled and diced
  • 8 slices bacon, chopped
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 (8 oz) block cream cheese
  • 2 cups shredded cheddar cheese
  • Green onions for garnish
  • Optional: Sour cream for serving

Instructions

  1. Prepare your ingredients by washing and peeling the potatoes; dice them into bite-sized pieces. Dice the onion and mince the garlic.
  2. In a skillet over medium heat, cook the chopped bacon until crispy. Remove and set aside, leaving some drippings in the pan. Sauté onions until translucent, then add garlic for an additional minute.
  3. In the Crock Pot, combine diced potatoes, sautéed onions and garlic, chicken broth, cream cheese, and half of the crispy bacon. Stir well.
  4. Cover and cook on low for 6 hours or high for 3-4 hours until everything is tender.
  5. Blend until creamy but slightly chunky using an immersion blender. Stir in shredded cheddar cheese until melted.
  6. Serve topped with remaining bacon bits, sliced green onions, and a dollop of sour cream if desired.
