- 1 cup dried black beans
- 2 tbsp extra virgin olive oil
- 1 medium onion, diced
- 3–4 garlic cloves, minced
- 1 tsp ground cumin
- 1–2 bay leaves
- 1 bell pepper, chopped (green or red)
- ¼ cup fresh cilantro, chopped
- Juice of 1 lime
- Salt & pepper to taste
Instructions
- Soak black beans overnight in plenty of water. Rinse before cooking.
- In a large pot over medium heat, heat olive oil and sauté diced onions and bell peppers until the onions are translucent (about 5 minutes).
- Add minced garlic, cumin, and bay leaves; cook for another minute.
- Drain soaked beans and add to the pot with enough water to cover by an inch (about 4 cups). Bring to a boil.
- Reduce heat to low, cover, and simmer for 1.5 to 2 hours or until beans are tender. Stir occasionally and add more water if needed.
- Once cooked, stir in lime juice, cilantro, salt, and pepper. Mix well before serving.
