Description

  • 1 cup dried black beans
  • 2 tbsp extra virgin olive oil
  • 1 medium onion, diced
  • 34 garlic cloves, minced
  • 1 tsp ground cumin
  • 12 bay leaves
  • 1 bell pepper, chopped (green or red)
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt & pepper to taste

Instructions

  1. Soak black beans overnight in plenty of water. Rinse before cooking.
  2. In a large pot over medium heat, heat olive oil and sauté diced onions and bell peppers until the onions are translucent (about 5 minutes).
  3. Add minced garlic, cumin, and bay leaves; cook for another minute.
  4. Drain soaked beans and add to the pot with enough water to cover by an inch (about 4 cups). Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 1.5 to 2 hours or until beans are tender. Stir occasionally and add more water if needed.
  6. Once cooked, stir in lime juice, cilantro, salt, and pepper. Mix well before serving.
