  • 1 cup mixed nuts (almonds, walnuts, pecans)
  • 1 cup dark chocolate chips (70% cacao or higher)
  • 1/4 cup maple syrup
  • 1/2 tsp sea salt (plus extra for topping)
  • 1 tsp vanilla extract
  • 2 tbsp coconut oil

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a microwave-safe bowl, melt dark chocolate chips and coconut oil in 30-second intervals until smooth.
  3. In another bowl, mix the mixed nuts with maple syrup and vanilla extract until well-coated.
  4. Stir the melted chocolate into the nut mixture until all nuts are evenly coated.
  5. Spread the mixture into the prepared pan, pressing down firmly.
  6. Bake for 20-25 minutes until set but soft in the center. Let cool completely before slicing.
