  • 6 cups Granny Smith or Honeycrisp apples (peeled and sliced)
  • 2 tsp cinnamon
  • ½ tsp nutmeg
  • 2 tbsp lemon juice
  • ½ tsp salt
  • 1 egg (for egg wash)

Instructions

  1. Make the Crust: In a mixing bowl, combine flour and salt. Cut in cold butter until crumbly. Gradually add ice water until dough forms. Wrap in plastic wrap and chill for 30 minutes.
  2. Prepare Filling: Toss sliced apples with both sugars, cinnamon, nutmeg, lemon juice, and salt.
  3. Roll Out Dough: Divide chilled dough in half, roll out one half to fit your pie pan.
  4. Assemble: Pour apple filling into the bottom crust. Roll out second dough half for the top crust; cut slits for steam vents or create a lattice design.
  5. Bake: Preheat oven to 425°F (220°C). Brush top crust with egg wash. Bake for 15 minutes then reduce temperature to 350°F (175°C) and bake for another 30-35 minutes until golden.
