- 5 tbsp melted butter
- 8 oz cream cheese (full-fat)
- 4 oz feta cheese (high-quality)
- ¾ cup granulated sugar
- 3 large eggs
- 2 tsp pure vanilla extract
- 2 tbsp freshly squeezed lemon juice
Instructions
- Preheat your oven to 350°F (175°C). In a bowl, mix the crushed biscuits with melted butter until moistened.
- Press the mixture into the bottom of a springform pan and bake for 10 minutes until golden.
- In another bowl, beat cream cheese and feta until smooth. Add sugar, eggs, vanilla, and lemon juice; mix until combined.
- Pour the filling over the crust and smooth the top with a spatula.
- Bake for 40-45 minutes until set but slightly jiggly in the center. Let cool completely before refrigerating for at least 4 hours or overnight.
