  • 2 cups parsnips, chopped
  • 2 cups sweet potatoes, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 3 tablespoons tahini
  • 1 tablespoon lemon juice
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and chop the root vegetables into uniform bite-sized pieces.
  3. In a large bowl, toss the vegetables with olive oil, minced garlic, thyme, rosemary, salt, and pepper.
  4. Spread the mixture on a parchment-lined baking sheet in a single layer.
  5. Roast for 30–35 minutes until golden brown and fork-tender; stir halfway through for even cooking.
  6. While roasting, whisk together tahini, lemon juice, water (to thin), salt, and pepper until smooth.
