- 4 boneless, skinless chicken breasts (about 1 lb)
- 4 cloves fresh garlic, minced
- 12 oz fettuccine or penne pasta
- 1 cup heavy cream
- 1 cup freshly grated parmesan cheese
- 2 tsp Italian seasoning
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- In a large pot of salted boiling water, cook pasta according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper. Cook for 6–7 minutes per side until golden brown and cooked through. Remove from skillet and slice.
- In the same skillet, reduce heat slightly and add minced garlic. Sauté for about 1 minute until fragrant.
- Pour in heavy cream while stirring constantly. Add parmesan cheese and stir until melted and smooth; season with Italian seasoning.
- Add cooked pasta and sliced chicken to the skillet and toss well to coat in the sauce. Simmer for 2–3 minutes.
