  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 4 cloves fresh garlic, minced
  • 12 oz fettuccine or penne pasta
  • 1 cup heavy cream
  • 1 cup freshly grated parmesan cheese
  • 2 tsp Italian seasoning
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot of salted boiling water, cook pasta according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper. Cook for 6–7 minutes per side until golden brown and cooked through. Remove from skillet and slice.
  3. In the same skillet, reduce heat slightly and add minced garlic. Sauté for about 1 minute until fragrant.
  4. Pour in heavy cream while stirring constantly. Add parmesan cheese and stir until melted and smooth; season with Italian seasoning.
  5. Add cooked pasta and sliced chicken to the skillet and toss well to coat in the sauce. Simmer for 2–3 minutes.
