  • 4 ears fresh corn, husked
  • 2 cups cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 1/2 cup fresh basil leaves, chopped

  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium heat. Grill the corn for 10-15 minutes until charred, turning occasionally.
  2. While corn grills, combine halved cherry tomatoes and sliced red onion in a large mixing bowl.
  3. Once grilled, let the corn cool slightly before cutting kernels off the cob into the bowl with tomatoes and onion.
  4. Add chopped basil, olive oil, and balsamic vinegar to the bowl. Season with salt and pepper.
  5. Toss gently until well combined. Serve immediately or chill briefly before serving.
