  • 1 cup sushi rice
  • 2 tbsp rice vinegar (seasoned)
  • 4 nori sheets
  • 1 ripe avocado, sliced
  • 1 cucumber, julienned (seedless)
  • 6 oz crab meat (or imitation crab)
  • 1 tbsp toasted sesame seeds

Instructions

  1. Rinse sushi rice under cold water until clear. Cook according to package instructions and let cool with rice vinegar mixed in.
  2. Place a bamboo mat covered with plastic wrap on your work surface. Lay a nori sheet shiny side down.
  3. With wet fingers, spread about ¾ cup of cooled sushi rice evenly across the nori, leaving a 1-inch border at the top.
  4. Arrange slices of avocado, cucumber, and crab meat horizontally across the center of the rice.
  5. Starting from the bottom edge of the mat, roll tightly while tucking in the fillings. Seal the edge with a dab of water.
  6. Slice your roll into bite-sized pieces using a sharp knife dipped in water.
