  • 1/2 cup water
  • 2 tbsp unflavored gelatin (about 2 packets)
  • 1 tsp vanilla extract
  • 1/4 cup powdered sugar (for dusting)
  • 1/4 cup corn syrup

Instructions

  1. Prepare your tools: Gather a stand mixer, saucepan, and an 8×8-inch baking pan lined with parchment paper.
  2. Bloom the gelatin: In a small bowl, sprinkle gelatin over 1/4 cup cold water. Let it sit for about 10 minutes.
  3. Cook the sugar mixture: In a saucepan over medium heat, combine granulated sugar, corn syrup, and remaining water. Stir until dissolved; bring to a boil without stirring until it reaches 240°F (115°C).
  4. Combine everything: Carefully pour the hot sugar mixture into the bloomed gelatin while mixing on low speed. Gradually increase speed and whip for about 10 minutes until fluffy.
  5. Flavor & set: Add vanilla extract in the last minute of mixing, then pour into the prepared pan. Dust with powdered sugar, cover lightly with plastic wrap, and let set at room temperature overnight.
  6. Cut & enjoy: Once set, dust your work surface with powdered sugar and turn out the marshmallow slab to cut into squares.
