Instructions

  2. Beat softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Gradually mix in flour, baking powder, cinnamon, and lemon zest alternately with milk until just combined.
  4. In a separate bowl, whisk egg whites to soft peaks and gently fold into the batter.
  5. Divide the batter between the prepared pans and bake for 25-30 minutes until golden brown. Test with a toothpick to ensure doneness.
  6. While cooling, prepare the filling by mixing ricotta cheese, powdered sugar, vanilla extract, mini chocolate chips, and cinnamon until smooth.
