  • 4 large russet potatoes
  • 1 lb sirloin steak (or ribeye)
  • 1 cup shredded sharp cheddar cheese
  • ½ cup sour cream
  • ¼ cup chopped green onions
  • 2 tbsp unsalted butter
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C). Scrub the potatoes clean and dry them with a paper towel.
  2. Prick each potato several times with a fork. Bake directly on the oven rack for 45-60 minutes until tender.
  3. While the potatoes bake, season the steak with salt and pepper and heat olive oil in a skillet over medium-high heat. Cook steak for about 4-5 minutes per side, achieving desired doneness. Let rest before slicing.
