  • 1 cup sharp cheddar cheese, shredded
  • ½ cup cooked bacon bits
  • ½ cup sour cream
  • 2 tbsp chives or green onions, chopped
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Rinse the baby potatoes under cold water until clean.
  2. Slice each potato in half lengthwise to expose the fluffy interior.
  3. In a mixing bowl, toss the halved potatoes with olive oil, salt, and pepper until evenly coated.
