- 2 tbsp honey or maple syrup

Instructions
- Preheat your oven to 400°F (200°C).
- Slice the eggplants in half lengthwise and score lightly with a knife.
- In a bowl, whisk together miso paste, soy sauce, honey or maple syrup, and sesame oil until smooth.
- Generously brush the miso glaze over each eggplant half.
- Place the glazed eggplants on a parchment-lined baking sheet and bake for 25-30 minutes until tender and caramelized.
- Sprinkle with chopped green onions and sesame seeds before serving.
