Ingredients

  • 2 medium eggplants (about 1 lb)
  • 4 tbsp white or yellow miso paste
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp honey or maple syrup
  • 2 tbsp toasted sesame oil
  • 2 green onions, chopped
  • 1 tbsp sesame seeds

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the eggplants in half lengthwise and score lightly with a knife.
  3. In a bowl, whisk together miso paste, soy sauce, honey or maple syrup, and sesame oil until smooth.
  4. Generously brush the miso glaze over each eggplant half.
  5. Place the glazed eggplants on a parchment-lined baking sheet and bake for 25-30 minutes until tender and caramelized.
  6. Sprinkle with chopped green onions and sesame seeds before serving.
