  • 1 cup shredded sharp cheddar cheese
  • 4 tbsp butter
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ cup chives or green onions (for garnish)

Instructions

  1. Peel and chop the potatoes into even chunks. Rinse under cold water until clear.
  2. Boil the potatoes in a pot of water over medium-high heat for about 15 minutes until fork-tender.
  3. Drain the cooked potatoes and return them to the pot. Mash with butter until smooth.
  4. Stir in heavy cream and fold in cheddar cheese until well combined.
  5. Season with garlic powder, salt, and pepper to taste.
  6. Transfer to a greased baking dish, top with more cheese if desired, and bake at 375°F (190°C) for 25-30 minutes until bubbly and golden brown.
