Instructions

  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in peppermint extract.
  4. Gradually add dry ingredients to the wet mixture until just combined; avoid overmixing.
  5. In another bowl, beat cream cheese and powdered sugar until smooth; fold in crushed candy canes for the filling.
  6. Scoop dough onto prepared sheets, making an indent in each ball for filling. Spoon cream cheese mixture into the center of each cookie ball.
  7. Bake for 12-15 minutes or until edges are golden but centers remain soft. Cool on baking sheets before transferring to wire racks.
