  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • ½ cup butter (room temperature)
  • 2 cups ice cream (your choice of flavor)
  • 1 tsp baking soda
  • ¼ tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In another bowl, cream together butter and sugar until light and fluffy.
  4. Fold in chopped pistachios into the butter mixture.
  5. Gradually combine dry ingredients with wet mixture, mixing on low speed until just combined.
  6. Scoop dough onto lined baking sheets, spacing them two inches apart.
  7. Bake for 10–12 minutes until edges are golden but centers remain soft.
  8. Allow cookies to cool for 5 minutes before transferring to wire racks to cool completely.
  9. Once cooled, scoop ice cream between two cookies and gently press together.
  10. Freeze assembled sandwiches for at least 30 minutes before serving.
