  • 2 tsp salt
  • 2 large eggs

Instructions

  1. Prepare your ingredients by bringing them to room temperature.
  2. Boil the peeled potatoes until fork-tender (15-20 minutes), then drain and mash until smooth while still warm.
  3. In a bowl, combine warm milk, sugar, and yeast; let it sit until frothy (about 5 minutes).
  4. Stir in melted butter and eggs into the yeast mixture.
  5. In another bowl, whisk together flour and salt; gradually add to the wet mixture until a dough forms.
  6. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  7. Place in a greased bowl, cover with a damp cloth, and let rise in a warm spot until doubled in size (about 1 hour).
  8. Punch down the dough, divide into equal pieces, shape into balls, and place on a parchment-lined baking sheet.
  9. Let rise again for 30 minutes before preheating your oven to 375°F (190°C).
  10. Bake for 20-25 minutes until golden brown.
