- 2–3 ripe bananas (mashed)
- 1 cup canned pumpkin puree
- 1 ½ cups all-purpose flour
- ¾ cup brown sugar
- ¼ cup granulated sugar
- 1 tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ tsp salt
- 2 large eggs
- ⅓ cup vegetable oil or melted butter
- ½ cup chopped nuts or chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
- In a large bowl, mash the bananas until smooth. Stir in pumpkin puree, sugars, eggs, and oil/butter until well combined.
- In another bowl, sift together flour, baking soda, spices, and salt.
- Gradually fold dry ingredients into the wet mixture until just combined. Incorporate optional nuts or chocolate chips if desired.
- Pour batter into prepared pan and bake for 50-60 minutes or until a toothpick comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to wire racks.
