  • 23 ripe bananas (mashed)
  • 1 cup canned pumpkin puree
  • 1 ½ cups all-purpose flour
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • 2 large eggs
  • ⅓ cup vegetable oil or melted butter
  • ½ cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  2. In a large bowl, mash the bananas until smooth. Stir in pumpkin puree, sugars, eggs, and oil/butter until well combined.
  3. In another bowl, sift together flour, baking soda, spices, and salt.
  4. Gradually fold dry ingredients into the wet mixture until just combined. Incorporate optional nuts or chocolate chips if desired.
  5. Pour batter into prepared pan and bake for 50-60 minutes or until a toothpick comes out clean.
  6. Allow to cool in the pan for 10 minutes before transferring to wire racks.
