  • 8 oz penne pasta
  • 2 cups vine-ripened tomatoes, halved
  • 4 cloves fresh garlic, minced
  • 1 cup ricotta cheese
  • 2 tbsp extra virgin olive oil (plus more for drizzling)
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste
  • 1/4 cup grated parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Arrange halved tomatoes on a baking sheet. Drizzle with olive oil, season with salt and pepper, and roast for 25-30 minutes until caramelized.
  3. While tomatoes roast, boil salted water in a large pot. Add penne pasta and cook according to package instructions until al dente.
  4. In a skillet over medium heat, add olive oil and sauté minced garlic for about 1 minute until fragrant.
  5. Lower the heat and mix in ricotta cheese until smooth. If too thick, add some reserved pasta cooking water.
  6. Drain the pasta and combine it with the ricotta mixture, adding roasted tomatoes and fresh basil. Toss well.
  7. Serve warm topped with grated parmesan cheese.
