- 8 oz penne pasta
- 2 cups vine-ripened tomatoes, halved
- 4 cloves fresh garlic, minced
- 1 cup ricotta cheese
- 2 tbsp extra virgin olive oil (plus more for drizzling)
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
- 1/4 cup grated parmesan cheese
Instructions
- Preheat your oven to 400°F (200°C).
- Arrange halved tomatoes on a baking sheet. Drizzle with olive oil, season with salt and pepper, and roast for 25-30 minutes until caramelized.
- While tomatoes roast, boil salted water in a large pot. Add penne pasta and cook according to package instructions until al dente.
- In a skillet over medium heat, add olive oil and sauté minced garlic for about 1 minute until fragrant.
- Lower the heat and mix in ricotta cheese until smooth. If too thick, add some reserved pasta cooking water.
- Drain the pasta and combine it with the ricotta mixture, adding roasted tomatoes and fresh basil. Toss well.
- Serve warm topped with grated parmesan cheese.
