  • 2 large sweet yellow onions, thinly sliced
  • 1 cup heavy cream
  • 2 cups Gruyère cheese, grated
  • 3 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 teaspoon fresh thyme (or ½ teaspoon dried thyme)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a skillet, melt butter over medium heat. Add onions and sauté until golden brown, about 15-20 minutes. Stir in garlic and thyme for the last few minutes.
  3. Layer half the sliced potatoes in the baking dish, seasoning with salt and pepper. Top with half the caramelized onions.
  4. In a bowl, mix cream with salt, pepper, and half of the cheese; pour over the layered potatoes. Repeat layers with remaining ingredients.
  5. Cover with foil and bake for 45 minutes. Remove foil, add remaining cheese on top, and bake uncovered for an additional 20-30 minutes until golden brown.
